The perfect summer mocktail is light and refreshing, and this tangy combination of fresh watermelon juice, lime juice, and a splash of club soda certainly fits the bill. Watermelon juice can be purchased at most grocery stores, especially in the summertime. However if you can’t find it, place cubed watermelon without the rind in a blender, blend until smooth, and then pass the mixture through a strainer. Store in the refrigerator until ready to drink.

Ingredients
- 1 1/2 cups watermelon juice
- 2 tablespoons lime juice
- 1 cup club soda
- lime wheels, for garnish
Directions
Fill a cup with ice and add 3/4 cup watermelon juice. Top with 1 tablespoon lime juice and ½ cup club soda. Repeat with remaining ingredients in a second glass.
