Ingredients
- 1 cup tri-color quinoa, cooked
- 3 tablespoons coconut oil
- 2 cups water
- 1 cup sweet potato hash
- 1 bunch kale, chopped
- 1/2 teaspoon salt
- 1 lemon, juiced
- 1/4 cup pecans
- 1 handful flat leaf parsley, chopped
Directions
Prepare sweet potato hash or reheat in a skillet with coconut oil.
Add kale to the pan with the sweet potatoes. After about a minute, add in the quinoa, lemon juice, water, and spices to taste.
After the kale has cooked down, add in chopped pecans and parsley on top.
